Button mushroom 菇菇菇

Did you know white button mushroom, cremini (brown button) mushroom, and portobello mushroom are all of the same variety? The one factor that makes each mushroom differ from each other is age. The white button is the youngest of all, it is cultivated for its pale colour and soft texture, while the portobello is the most mature. It is an overgrown version of white mushroom. The spreaded meaty cap is bursting of intense umami flavour. Cremini is the in-betweem species, neither white nor meaty, but has a firmer texture that holds better in soups or stews.
