Double tomato somen 層層蕃茄層層麵

It feels like it won’t be long before we have to bid goodbye to summer. We hurried to the market to get us some fresh, ripe, juicy tomatoes. Blitz some in the food processor with shiso leaves and ume soured plum, season slightly with salt. Pour about 3/4 cup of the puree in the bottom of a soup bowl. Chop some tomatoes into small cubes and marinate them in just a bit of soy sauce and honey. Meanwhile prepare some somen noodles by boiling them then drain off when the noodles have softened. Run somen under cold water then drain again. Slide drained somen noodles over tomato puree, top somen with chopped tomatoes then sprinkle with some crushed nori seaweed. We are surely going to miss summer.

家中種的蕃茄尚未結出果實,看著它一天一天長高,令整個厨房亦充滿生命力,話說這棵蕃茄的種子購自加拿大的一個車厘茄有機農場,吃過蕃茄後,把種子留下來試試種植,很快就發芽而且越長越高,為它設計過不少建設,花盤、支架、水利工程(出外旅遊的自動澆水系統),幾個月來強壯又芳香,種不種到果實已不是必要的因素。這裡結不出果實,唯有繼續買本地有機農場的蕃茄,我未曾感覺到有機的蕃茄特別香甜,只是吃下去感到份外安心,起碼不用抖結農藥毒害的問題。
天氣尚未轉涼,還是冷食比較適合,蕃茄加上素麵更可帶來清新的味道,蕃茄粒在上,素麵夾在蕃茄醬和蕃茄粒之間,簡單快捷又一餐,唔駛落街食快餐。
