Banana bread 香蕉蛋糕

Whether banana breads are developed to promote flour and baking soda/powder, or a byproduct of the Great Depression as housewives did not wish to see overripe bananas go to waste, they are certainly on the list of cakes-breads when one first attempts at baking. They are easy to make, they are almost fail-proof, they smell good coming out of the oven, they have a crunchy crust and a soft gooey centre. Who doesn’t love a chunky slice of banana bread with a generous smear of butter (or Nutella)?

香蕉蛋糕看似平平無奇,這一條貌似大峽谷的裂縫恍忽在透露著一絲秘密,然後時間、溫度、耐性和最重要的情感,這一切於咬下蛋糕的這一個人的笑容上可以觀察得到。這件平平無奇的蛋糕很善於帶來溫暖,俱備撫慰人心的用途。
一切看似很隨心,香蕉買多了,熟透了,不想吃了,弄些香蕉蛋糕吧,蛋糕吃剩了,放進雪櫃吧,反正明天拿出來解凍後味道也未至於太差。很多人第一次使用焗爐的第一件作品就會是香蕉蛋糕,因為就是如此隨意而充滿成就感,人們咬下去亦輕易感受到愛和溫暖。有一次,街角工作室的工作人員充滿著困惑,失去朝氣,我就可以馬上回到厨房給他們造一個香蕉蛋糕作為下午茶,一杯熱茶,一件糕餅,馬上醒神朝氣勃勃就是這樣簡單快捷。
